The Melting Moments are biscuits filled with a passion fruit butter cream….
Like the macaroons, they are both smooth and crunchy but simply different!
For the biscuits
- 250g butter at room temperature
- 80g icing sugar
- 1 tsp vanilla extract
- 225g flour
- 75g corn flour
As for a shortcut pastry, pour all the ingredients in a bowl (cut the butter into several pieces) and mix them with your hands (or with the padle of your Kitchen Aid if you have one).
Once you obtain a crumble like mix, assemble them into a ball, put it in a cling film and store it in the fridge for at least 30 min.
Put some baking paper on a cooking tray maybe more.
Once cold, make 30g portions that you will lie on the tray in a disc shape (about 7 cm diameter).
Put in the preheated oven for 10′ at 180°.
The biscuits have to stay white and when you will take them out of the oven, they will still be a little soft (like the cookies) but will get hard once they’ll cool down.
For the passion fruit butter cream
- 80g butter at room temperature
- 110g icing sugar
- 2 passion fruits
While the biscuits are being cooked, you can prepare the filling.
You just have to batter together the butter, sugar and passion fruits and keep at hand untill the biscuits are cold.
How to assemble
Return half of the biscuits upside down and pour a small spoon of the filling in the centre.
Spread it a little but not all over the biscuits so that the filling does not get out once you cover it with the other biscuit.
Put the other biscuit on top and press a little so that they stick together.
